Every January I do a round of Whole30 to help get the year started right and kick any bad eating habits that might have snuck in during the holidays. This week I had to do a road trip (4.5 hours each way) and thought I'd share what I ate. Normally, being on this drive triggers the snacking monster and makes me want to eat junk, but this time I planned ahead!
Before I left, I had breakfast at home so the only meal I needed on the road was lunch. My car lunch was a leftover bunless turkey burger with salsa (Trader Joe's has compliant salsa), holy guacamole, sweet peppers, an apple and Larabar. That night for dinner away from home I packed tuna fish, more sweet peppers, carrots, almonds and some cauliflower rice. Breakfast was an egg casserole I had made for the week that has peppers, mushrooms, spinach, apple sausage, and potatoes in it. Then back on the road for another 4 hours. My road lunch was 2 hard boiled eggs, Lara bar, almonds, carrots and lots of black coffee!!!! I was proud of myself myself for not slipping even while traveling and if you plan and prepare, this Whole30 stuff isn't too hard! 25 days to go!
